Unlike my former home in Key West or my commuter home outside NYC, you really have to hunt to find the especially good restaurants near Palm Coast.
My Blog Consultant, Connie Rice, also writes for the Daytona Food Examiner. She just published and article and a receipe from The Shores restaurant located in Daytona Shores, a section of Daytona Beach:
Here is some of what she wrote that describes the restaurant:

Azure features three meals a day and an incredible view of the resort pool and Atlantic ocean. A new menu includes an expanded selection of sustainable food items – from fresh, local fish, free range chicken, hormone-free pork, and organic and hydroponic greens, to an extensive list of organic cocktails and wines, and Rainforest Alliance Certified."
I have eaten there once (with my friends from Wilmington, Del. and the ex CEO of Sysco, the fine food purveyor...he paid) Wow. It was great. Just go in and walk around if you can't afford to eat.
